Honey and Lemon Thyme Roasted Carrots from Donna Hay using Two Busy Bees Honey

Ginger Honey and Lemon Thyme Roasted Carrots

INGREDIENTS

  • 500G HEIRLOOM CARROTS, PEELED AND TRIMMED
  • 2 TABLESPOONS EXTRA VIRGIN OLIVE OIL 
  • ¼ CUP (60ML) TWO BUSY BEES HONEY GINGER INFUSED HONEY 
  • 1 TABLESPOON LEMON JUICE 
  • 6 SPRIGS LEMON THYME 
  • SEA SALT AND CRACKED BLACK PEPPER

METHOD

  1. Preheat oven to 200°C (400°F). Place the carrots on a large baking tray with the oil, ginger infused honey, lemon juice, thyme, salt and pepper and toss to combine.
Roast for 30 minutes or until the carrots are tender. Serves 2.
