Whisky and Honey Smash - Celebrate World Whisky Day 2021

Whisky and Honey Smash

A very sophisticated toddy drink!

Ingredients

2 tbsp clear Two Busy Bees Honey honey
½ lemon, diced, plus 2 pared strips of lemon zest, to garnish
4 sprigs of rosemary
100ml whisky (something smoky works well)

Step by Step

Mix together the honey and 1 tablespoon of boiling water in a cocktail shaker or jar with a lid. Using a spoon, or the end of a rolling pan, muddle (crush together) the diced lemon and leaves from 2 sprigs of rosemary with the honey mixture. Add the whisky and shake to combine.

Strain into tumblers filled with lots of crushed ice. Garnish each glass with a scorched rosemary sprig (use a blowtorch, or the burner on a gas hob, to torch the ends so they release their aromatics), and the lemon zest.
